Super Sweet Potato Bars






This sweet potato recipe was inspired and influenced by two things ; my super picky two year old eater, and a recipe from the book “No Whine With Dinner”.
In an effort to please my child’s finicky taste buds, I have been working on perfecting this recipe. These bars include veggies, protein and carbs. So far it has been a hit in my house. We ate more than half the pan by the second day. Now I have to start rationing it!
The recipe found in the cook book “No Whine With Dinner” Gave me the idea of adding more flour and ground nuts for more texture and less mush. The original on page 163 is called Chocolaty Pumpkin Bars.


Most of the recipes in this cook book are pretty healthy and kid friendly, though I did find there to be a bit too many recipes calling for pork dishes and the like…

Super Sweet Potato Bars
Ingredients:
1 cup whole wheat flour
1 cup whole spelt or all purpose flour
1 cup cashews or pecans finely chopped
½ cup granulated sugar
1/8 cup blue agave (optional for some extra natural sweetness)
½ tsp baking soda
½ tsp salt
1 heaping teaspoon cinnamon
4 large eggs beaten
15 oz. blended/mashed sweet potatoes
¼ cup light olive or canola oil
¼ cup applesauce
¼ cup milk (for non-dairy use rice milk, coconut milk, or soy milk)
½ cup chocolate chips


1) Wash and boil two medium sweet potatoes till tender (15 oz)
2) Preheat Oven to 350. Lightly oil or coat a 9x13 pan
3) Blend sweet potatoes till smooth in food processor (if you don’t have a processor mash well)
4) Whisk together dry ingredients in one bowl
5) In a separate bowl mix the sweet potato, beaten eggs, oil, milk, applesauce,
6) Pour the wet ingredients on top of the dry and mix till blended
7) Add in chocolate chips
8) Spread batter evenly into prepared pan for 25-30 minutes or until toothpick stuck in the center comes out clean. Allow to cool before digging in!

  1. Delicious! 2 out of 3 boys loved them. I used 2 cups of King Arthurs white whole wheat flour and chopped pecans. Next time I'll try with ground nuts so they're not detectable and maybe we'll have all 3 boys eating them. I, of course, devoured them.

  2. So glad to hear that they turned out for you and two out of your three guys. Yes, the ground nuts may be an even better bet next time if your son doesn't go for that kind of thing. I'd be curious to see if he'd go for them a second time around.
