Healthy Chocolate Chip Zucchini Bread


Here’s my healthy version of this delicious moist zucchini bread. It’s always popular with the kids, even my most picky eater approves. We just make sure not to tell him that there’s lots of freshly grated zucchini baked inside. And of course we include enough chocolate chips in the batter so that we can successfully entice the kids to open wide and take that first bite!
Don’t forget to double the recipe so you can make it last for longer than a day!



1 ½ cups whole wheat flour/whole spelt flour
1 ½ cups all purpose flour
1 tsp baking soda
1 tsp baking powder
3 teaspoons ground cinnamon
3 eggs
½ cup vegetable oil
½ cup unsweetened applesauce
1 ¼ cups white sugar
3 tsp vanilla extract
2 ½ cups grated (washed and unpeeled) zucchini
½ cups chocolate chips

1) Preheat oven to 350.
2) Grease and flour a medium size bread loaf pan.
3) Sift and mix all dry ingredients (except chocolate chips and zucchini) together in separate bowl.
4) In another big bowl mix sugar together with the eggs, oil, applesauce and vanilla.
5) Next, pour the dry ingredients into the wet ingredients and mix well.
6) Add in the grated zucchini and half the chocolate chips.
7) Pour the mixture into the greased and floured pan.
8) Sprinkle on top of the batter the rest of the chocolate chips (this is for visual effect. We want our kids to see that this is the good stuff).
9) Bake in the oven, uncovered for about 50- 60 minutes. The timing is extremely subjective. You have just got to know your own oven. Mine gets hot fast and usually takes less time to bake. Keep an eye on it, and you will do fine.
